Dear Members and Friends:

         It is a great pride that we prepare to celebrate the 40th anniversary of the founding of La Chaine des Rotisseurs in Mexico and the 20th Anniversary of La Chaine in Cancún.

         The Mexican Caribbean, with its location at the top of the Yucatan Peninsula is, without a doubt, one of the most exotic and amazing areas of Mexico. Here, you will find one of the  New 7 Wonders of the World, Chichen Itza in Yucatan, and 2 ot the 13 “Wonders of Mexico”, one of them being Tulum, made by man as the only Mayan city built directly by the ocean, and the other Xel-Ha, a natural wonder of lagoons and sink-holes. Both of these are close to Cancun.

         Another great attraction recognized around the world is the Natural Park Xcaret with its splendid show of Mexico’s ancient and contemporay history as well as the culture, flora and fauna of this wonderfull region.

         The roots of the Mexican Cuisine, in particular the Yucatecan Gastronomy, is the union of pre-Hispanic mayan ingredients with others that have arrived during the last 500 years. Since the Spanish Conquest until modern times, they have fused together with the village foods and cultures and as a result, this magnificent and unique gastronomy has evolved.

         We have prepared a program that you will surely enjoy in Cancun, the culture, the gastronomy and above all, the induction Ceremony.
